Blueberry Spelt Pancakes

How was everyone’s holiday weekend? Did you guys enjoy a few days off of work? What was the highlight of your weekend?

I think the highlight of my weekend was buying this:

A Macbook Pro!

My old Dell (which was a complete piece of crap) decided to die on Saturday. The network card went out and it was part of the motherboard, so it would be more expensive to fix it then the computer was worth. It rendered my computer pretty much useless. Who would want a LABTOP that doesn’t have a network card to get on the internet? Doesn’t that completely defeat the purpose? Haha.

Anyways, I have been wanting this computer for awhile, so I finally had an excuse to buy one ;) It was a heck of a lot more expensive than buying a new Windows PC, but I totally think it was worth it. I am really not looking forward to my credit card bill though…

Other highlights of the weekend included:

  1. Spending time with my family (I haven’t been home in six months)
  2. Seeing a few friends that I haven’t seen in years.
  3. Fireworks.
  4. Bison burgers on the grill.
  5. Going to . It was so good we went twice in one weekend!
  6. Not having to work or going to class. It was really nice to veg out for a few days.

I also had some killer runs over the weekend. The weather was actually really nice all weekend (except for a few thunderstorms, but it didn’t affect my running at all).

Speaking of running, I kick started my training for the Marine Corps Marathon this morning with a tempo run. My legs felt like complete poop, but I guess that happens sometimes.

Time: 1:15:03

Distance: 10.21 miles

Average Pace: 7:21 per mile

I guess my training really started yesterday, but today was my first “real” workout that I had on the schedule. Unfortunately, my legs felt like lead and it didn’t exactly go as planned.

It was already really hot this morning by the time I got out there, so I am hoping that had a lot to do with it. I felt like I had plenty of energy, but my legs just felt like they wanted to go really slow.

I had planned on 10 miles total with 5 miles at around 6:20-6:25, but my tempo portion ended up being around 6:42. Not exactly what I wanted, but I am going to brush it off and try it again later in the week. Hopefully it was just a fluke and it was “one of those days”. We all get them right? I’m not really worried, but it wasn’t exactly a confidence booster on week 1 of training.

It was my last run in Texas for quite awhile :( I am heading back to Alabama later this afternoon. I am sad to leave, but I am ready to get back to my normal routine.

After my run today, I whipped up a new pancake recipe :) I am on a serious pancake kick right now! I have had them everyday that I have been home for breakfast except once (I made waffles instead. Haha).

Blueberry Spelt Pancakes

Ingredients

  • 2 cups spelt flour
  • 2 maple syrup
  • 1 tablespoon baking powder
  • 3/4 teaspoon salt
  • 1 3/4 cups coconut milk
  • 2 tablespoons coconut oil
  • 2 teaspoons vanilla
  • A few handfuls of blueberries

Instructions

  1. In a medium bowl, whisk together the spelt flour, baking powder and salt.
  2. Combine the coconut milk, coconut oil, vanilla, and maple syrup in another bowl.
  3. Combine the wet ingredients into the dry ingredients and mix well. Do not over mix; there should be small clumps. Add in blueberries.
  4. Heat a cast iron skillet prayed with oil on medium heat.
  5. Cook pancakes until bubbles form on one side. About 2-3 minutes.
  6. Flip pancakes and cook until golden brown. Another 2-3 minutes.
  7. Top with desired toppings.

Mmm. I added a banana and some peanut butter. Favorite pancake toppings :)

  • you should still be encouraged by that tempo! great pace and you have lots of time before the race to “peak” these workouts. are you following a specific plan or making one up yourself?

  • You’re going to love your MacBook Pro. I got mine this past December and don’t think I’ll ever go back to the PC. Nice pancake recipe also! PB + banana are my fav toppings too…I’ve never really enjoyed syrup for whatever reason.

  • Banana and pb is my fave pancake topping too. Toss in some dark chocolate chips, and who the heck would even dream of adding syrup? I think you are right to brush off the tempo as “one of those days.” They happen. And it was your first official workout week, so you’ve got plenty of time to work up to pace. Better to start slower than you’d like early in the season and work up to it, than start fast and burn out, right?

  • I’ve never cooked with spelt. Ever. I’ll need to stop at the whole foods bins the next time I’m there and pick some up. These pancakes look great! :D

    Favorite pancake topping would have to be bananas and peanut butter too. Although I also like a blueberry sauce or a drizzle of maple syrup with fresh fruit too. Mmmm…
