Week In Review: 12/27/10-1/2/11

I meant to get this post up yesterday, but it totally slipped my mind! Without further ado, here is what went down last week…

Monday

Running: 10.12 miles

Strength: 30 minutes of ITBS exercises

I also did a review of Vega Sports Performance Protein and made Tomato and Basil Stuffed Chicken.

Tuesday

Spinning: 45 minutes

Running: 5 miles

Stairmaster: 20 minutes

I also made Chocolate Pumpkin Cake and met up with a fellow blogger.

Wednesday

Running: 9 miles

I also made Lemon and Herb Grilled Lobster Tails.

Thursday

Running: 8.8 miles

Cycling: 43 minutes on my bike trainer

I also wrote about my goals for 2011.

Friday

Running: 8.13 miles (7:51 pace)

Cycling: 30 minutes on my trainer

Have you seen my top recipes of 2010?

Saturday

Running: 5.11 miles (all barefoot)

Cycling: 2 hours on the indoor trainer (no idea on the distance)

My 2010 year end review.

Sunday

Running: 10.10 miles (7:50 pace)

Cycling: 30 minutes on my trainer

I also made Chili-Garlic Rubbed Swordfish.

Last week was a great week on the workout front, cooking front, and the “life” front ;)

Now that I am back in Tuscaloosa for the year, I am preparing for my last semester of college (as well as another year of my life). I am very excited for class to start next week!

Watch out 2011, I am comin’ for ya  ;)

Great week! :)

By the way, would you mind sending me your ABSOLUTE best method for roasting vegetables? You have a few, but I trust your opinion on what is best.

For butternut squash, I would cube it, toss it in coconut oil (about 2 TBS for a medium squash), cinnamon, and then roast it in a 400* oven for 45 minutes.

Frozen broccoli is AWESOME roasted. I toss the frozen florets with olive oil, salt, and pepper and roast it at 400* for about 35 minutes. Depends on your oven, but they will get nice and crispy ;)

I LOVE your weeks in review because it reminds me of all the delicious recipes you make and I need to try!! Seriously the chicken and lobster tail looks amazing. Yay for getting back to routine!
