Sauteed Kale with Garlic and Lemon

Sauteed spinach and eggs is one of my favorite all time simple meals to make. It’s healthy, delicious, and can be thrown together within a matter of minutes.

Yesterday, when I was looking around the refrigerator to make something for lunch, two things that caught my eye first: a large bunch of kale and the brand new carton of eggs that I just purchased a few days ago.

In a matter of seconds, I knew what I was cooking ;)

This meal was the simplest of simple dishes, yet it was so incredibly delicious.  It’s just kale, simmered in chicken stock with garlic and lemon, and served on toast with perfect, runny fried egg on top.

Sauteed Kale with Garlic and Lemon

Ingredients

  • 1 1/2 pounds kale (rinsed and drained), stems and leaves coarsely chopped
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/2 cup chicken or vegetable stock
  • Salt and pepper, to taste
  • 1 TBS lemon juice

Directions

  1. Heat olive oil in a large saucepan over medium-high heat.
  2. Add the garlic and cook until soft, but not colored.
  3. Raise heat to high, add the stock and kale and toss to combine. Cover and cook for 5 minutes.
  4. Remove cover and continue to cook, stirring until all the liquid has evaporated. Add lemon juice and toss to combine.
  5. Season with salt and pepper to taste.

Once again your blog makes me starving (even though I ate ten minutes ago ha). I have never tried nutritional yeast……maybe I will someday:) Hope you have a great Wednesday!

Gotta love the nooch. It’s been my lifesaver on some things when I don’t have any daiya in the house. It’s super cheap and super good for you.

Yum – that looks fabulous! As for nutritional yeast – my mother used to make a horrendous breakfast drink out of milk, nutritional yeast and carob powder. She called it a chocolate drink and it was foisted on us most days – she had good intentions but I have not been able to stand the taste of that yeast (or carob) since!

Looks great–I might need to get some kale at Whole Foods tomorrow! I really haven’t used nooch enough to have an opinion on it–I need recipe ideas, I guess!
