Gnocchi with Pumpkin Cream Sauce

Tis’ the season for pumpkin! With Thanksgiving rolling around, it was about time for a Fall themed recipe post. Eating by the seasons is one of the most enjoyable ways to enjoy food. Especially when this is involved…

Everywhere I go, I see pumpkin this and pumpkin that. Pumpkin spice lattes, pumpkin waffles, pumpkin cream cheese muffins (oh man I need one of those) and even pumpkin cookies.

Now I have a massive craving for something sweet. Being a food blogger will totally do that to you ;)

While I am not crazy about pumpkin, I do enjoy it every once and awhile as long as it is prepared correctly. Pumpkin pancakes, count me in. Pumpkin hummus, not so much…

This pumpkin cream sauce fit the bill perfectly.

I really enjoyed the sweet/savory combination of flavors that were involved. To start, you have onions and garlic, but you end with honey and coconut milk (or cream). It is very interesting and makes for a wonderful dish.

If you have some pumpkin laying around, I highly recommend that you make this.

Trust me, you will not regret it!

Gnocchi with Pumpkin Cream Sauce

Ingredients

  • 1 onion, chopped
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 14 oz can of pumpkin
  • 2 tablespoons tomato paste
  • 1 ½ cups coconut milk (or cream)
  • 1 teaspoon ground nutmeg
  • 1 tablespoon honey
  • Sea salt and freshly ground black pepper, to taste
  • 1 recipe of prepared gnocchi

Directions

  1. In a medium non stick skillet, heat the olive oil over medium heat.
  2. Sauté the chopped onion with garlic until soft.
  3. Turn the heat to low and add pumpkin, tomato paste, coconut milk, nutmeg, and honey.
  4. Season with salt and pepper to taste.
  5. Simmer for 5 to 10 minutes until thickened.
  6. While the sauce is simmering, cook your gnocchi for 2 minutes (or until they float to the top) in lightly boiling water. Drain.
  7. Toss the gnocchi with the thickened sauce.
  8. Serve warm.

hmmm definitely never tried pumpkin hummus. :)
i love the gnocchi idea, though. i may use it in my local thanksgiving feast this year…i’m trying to find some good recipes! i also like that the cream sauce includes coconut milk. :)

My hubby loves when I make gnocchi with my pumpkin sauce. I like that yours has the tomato paste and coconut milk. Mine is more of a brown butter sauce. I wonder if I can sneak this recipe in on him!

Recipe for the sauce at the bottom of this post:

Basically start with your basic brown butter sauce and add the pumpkin. Let the gnocchi cook in the sauce. It also helps to buy pumpkin flavored gnocchi :)

My favorite pumpkin dish is pumpkin soup (even with my huge sweet tooth I somehow prefer my pumpkin dishes to be savory) and the pumpkin cream sauce has a lot of the same ingredients as my soup! And I love gnocchi, so I bet this combination is delicious.

That just sounds and looks so good! I’ve never made gnocchi before so I clicked on your link, then found the link for sweet potato gnocchi too! Yum! I’m definitely going to try this!

Sounds like a great use for pumpkin….good to know, since I got a three pack of obscenely large cans at Sam’s Club this week. I’ll have to bust it out with my sweet potato gnocchi, for a total fall fest!

This looks like a great recipe! I love sweet pumpkin things paired with savory items– Like pumpkin cream cheese on a whole wheat bagel or on a sweet potato. Or my pumpkin cornbread… recipe to come soon once I perfect it! I need to figure out how to use baking soda and baking powder- do you anything??
