Goat Cheese, Bacon, And Zucchini Frittata

Last week, disowned me after I made “fake bacon”. I spent all day trying to think a way to redeem myself, so I came up with this:

Believe it or not, this was my first time actually making a frittata. I love eggs, but I usually make them fried, scrambled with cheese, or made into an omelet. The egg is a nutritional powerhouse and can be prepared in a snap. If I ever need a quick meal, eggs are one of my go to ingredients because of it’s simplicity and overall variety.

Last night, I tried something new.

While this meal isn’t one of the healthiest I have ever created, it was delicious and quick, which was exactly what I needed last night.

I also wanted some cheese and bacon.

Goat Cheese, Bacon, And Zucchini Frittata


  • 3 eggs
  • Salt and pepper to taste
  • 1 tablespoon of butter (I used )
  • Few thin slices of onion
  • 1/2 medium zucchini, thinly sliced (I used a yellow zucchini)
  • 1.5 ounces fresh goat cheese
  • 1 roasted red pepper from a jar, chopped
  • 1 slice of bacon, fried and crumbled
  • Dried or fresh herbs of choice (I used tarragon)


1. Beat eggs and season well.

2. Heat butter in a small cast iron or other ovenproof skillet and cook onion, red pepper, and zucchini for 2 to 3 minutes until soft.

3. Add eggs and cook 1 to 2 minutes until almost set.

4. Sprinkle with goat cheese and crumbled bacon, then sprinkle with herbs.

5. Place under broiler until golden, 2 to 3 minutes.

This was a reminder that cheese, bacon, and eggs should ALWAYS be combined.

I giggled at your last line. When bacon, eggs, and cheese are combined, isn’t there some kind of synergistic effect that removes all the cholesterol/saturated fat and just leaves the protein, calcium, and nutrients? Right…? Or maybe that’s just wishful thinking on my part, haha. Fritatta looks outstanding.

eggs = my go-to meal, too. and i think that anything prepared at home is usually a lot better than eating out!

I love eggs for easy meals. I’m almost positive they’re on the menu tonight in the SCR household… :)

And bacon = love

I’ve never made a frittata- though I keep saying I want to try it. I’m like you with keeping it simple by scrambling the majority of the time.
