Cinnamon Roasted Sweet Potatoes

It is no doubt that sweet potatoes are one of my all time favorite foods. One of the reasons I love them so much (besides being absolutely delicious), is that they are so versatile. They can be made savory, sweet, or even a combination of both. They can be eaten roasted, grilled, sautéed, and boiled. Let’s face it, when it comes to sweet potatoes, the possibilities are endless.

At the grocery store this week, I discovered a form of sweet potatoes that I have never tried:


Baby sweet potatoes? Where have you been all my life? Since I was out of sweet potatoes and I needed my daily fix, I picked these up. They literally screamed “ROAST ME” the whole way home.

And roast them I did…


Cinnamon Roasted Sweet Potatoes


  • 2 tablespoons
  • 1-2 tablespoons of pure maple syrup (honey would be good too)
  • 1 pound of baby sweet potatoes, halved or cubed (you can use normal sweet potatoes and it will work fine)
  • 1 teaspoon ground cinnamon
  • Pinch of salt
  • Pinch of freshly ground pepper


  1. Preheat the oven to 400*.
  2. In a medium sized bowl, toss the sweet potatoes with the coconut oil, maple syrup, cinnamon, salt, and pepper.
  3. Layer them on a well oiled roasting pan and transfer to the oven.
  4. After 20 minutes, toss the sweet potatoes.
  5. After another 20 minutes, remove potatoes from the oven, sprinkle with more cinnamon, and serve hot.

While my little babies were roasting, the apartment smelled like a little place called heaven. I knew that my taste buds were in for a real treat when they came out of the oven.


I think these would actually make a great breakfast side dish. While I love savory breakfasts, I usually opt for something sweet in the morning. There is nothing wrong with starting the day off with a little sugar right?

I can’t choose! I love sweet (roasted with cinnamon and coconut butter) and savory (baked with garlic & chili powders and topped with guacamole).

I’ve been away from internet for a few days and am just now catching up! WOW @ your day from hell… when it rains, it pours! I just had a hunger attack looking at your veggie goat cheese quesadillas. And chocolate-banana smoothie. Annnnd sweet potatoes. And I loved your post on recovery… that’s one of the elements of running I have yet to nail down. The new layout/makeover looks fantastic!

Baby sweet potatoes=genius! I need to find some!
I love sweet potatoes any way, but I think I like them best with cinnamon and a blob of sunflower butter:)

Oh wow – great new layout!! Looks great! Aren’t sweet potatoes the BEST evah! I like them any which way…usually with ketchup and spices ;) . Sophisticated tastes I have don’t I lol ? :)

Do the baby ones taste different? I like them sweet and savory- sweet: cinnamon, peanut butter, or cream cheese and candied pecans (if you haven’t tried that one, try it!) Or savory: Cheddar and black beans.

And that run was so far…wow!
