Chocolate Chip Oatmeal Pancakes

I absolutely have to have something sweet for breakfast. I prefer chocolate, but if that is not in the cards, then I resort to peanut butter, fruit, or honey/maple syrup.

If I don’t have something sweet in the morning, I probably won’t be the most fun person to be around.

These pancakes are actually quite good for you, but you wouldn’t even think for a second that they were “healthy”. They are loaded with whole grains, but the instant you bit into them and taste the sweetness of the chocolate and honey, you might start moaning a little bit.

Chocolate Chip Oatmeal Pancakes

Ingredients

  • 1/2 cup whole wheat pastry flour
  • 1-2 tablespoons honey
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup rolled oats
  • 1 cup milk (I used coconut milk)
  • 1 egg
  • 2 tablespoons
  • 1/4 cup

Directions

  1. Preheat a lightly oiled over medium-low heat.
  2. In a large bowl, mix whole wheat pastry flour, baking powder, and salt.
  3. In a small bowl, mix oats and milk. Let sit for 15-20 minutes.
  4. Whisk in eggs, honey, and into the oatmeal mixture. Pour into the flour mixture all at once. Continue mixing until smooth. Fold in the .
  5. Pour batter in 1/4 cup portions at a time onto the . Cook 2 to 3 minutes, until bubbles begin to form. When using a , you want to cook them low and slow to prevent burning.
  6. Flip, and continue cooking until lightly browned on the other side.

My Maple Coconut Peanut Butter Sauce makes an excellent topping. Trust me, this combination is heavenly.

This was my first time trying and I am definitely a convert. These are amazing if you like chocolates natural flavor and bitterness.

you are definitely the pancake king! usually i like sweet-themed breakfasts, but lately i’ve been craving savory foods, like hummus + eggs.
