Grilled Halibut With Tomato Avocado Salsa

Whew! It has been a whirlwind of a day! At least I woke up on time though ;)

I was ready for some SPEED today!

Distance: 11.21

Average Pace: 7:34 per mile

We had a huge storm last night, so it was pleasantly cooler this morning. My power actually went out around 9:45 last night, so I took that as a signal that it was time to go to bed. I had to get up in about 7 hours anyways, so it worked out well. I slept like a rock and WOKE UP ON TIME.

I wouldn’t say the weather was enjoyable, but it wasn’t as ridiculously hot as it has been lately. It was probably about 10 degrees cooler, but it was still really humid which wasn’t fun. I’m not sure what is worse, the humidity or the heat. They are both torturous in their own ways.

Since I did a tempo run last week, I decided that mile repeats were on tap for this week.

After a three mile warm up, I did 4 X 1600 (1 mile) with 800 (1/2 mile) recovery in between. My splits were as follows:

  1. 6:21
  2. 6:16
  3. 6:17
  4. 6:22

Then I cooled down for the remaining distance, which happened to be the distance back to my apartment. I was seriously dying on that last mile, but I felt strong for the first three. I was so dehydrated towards the end that I started to feel a little lightheaded. I was in good spirits though :)

Grilled Halibut with Avocado Tomato Salsa

Ingredients

Tomato Avocado Salsa

  • 1 large tomato, diced
  • 1/4 cup diced red onion
  • 1/2 jalapeno, minced
  • 2-3 tablespoons lime juice
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon freshly ground pepper
  • 1/2 avocado, diced
  • 1/4 cup chopped fresh cilantro

Halibut

  • 6 oz filet of halibut
  • Salt
  • Pepper
  • Squirt of lemon (if desired)

Directions

  1. Make the salsa: Combine tomato, onion, jalapeno, lime juice to taste, salt and pepper in a medium bowl. Stir in avocado and cilantro.
  2. Prepare the fish: Preheat the grill to medium high heat. Rinse the fish and pat dry. Sprinkle the fish with salt, pepper, and lemon (if using). Grill on medium heat for 3 minutes per side until cooked through, but not overcooked. Your cooking time with depend on the thickness of the filet.
  3. Serve fish topped with salsa.

This was a totally satisfying dinner. A grilled vegetable salad, halibut with tomato avocado salsa, a sweet potato with coconut butter, and some chia bread with hummus. Seriously… Does it get any better than that? I think this has been the best meal of the week!

What a great run!
And talk about a wonderful dinner! I love all the flavours on that plate :)
My corn chowder last night was quite delicious this week. Although I have a pretty random meal planned for this evening – could be great – or it could be terrible….will just have to wait and see!

Sweet splits man! The whole meal looks banging- where do you get the coconut butter? I have the oil.

The best meal this week has to be the black bean burger I had on Sunday. Tonight is breakfast for dinner – so my pancakes might trump that burger……. :)

My mom and I have a recipe just like that–an avocado tomato basil salsa! It tastes fantastic on fish, especially halibut! Halibut is one of my favorite types of seafood…it’s so light and flaky.

That meal is right up my alley! Looks sooo good.

And great hair too! Lol…I can only imagine what my crazy curly hair would look like after a run in Alabama humidity. I’d probably look like some sort of crazy mad scientist!

My best meal was a PERFECT bagel breakfast out in Portland, OR. Maybe it was the water but hot darn was that the best.

I made a rockin’ spicy taco salad with cubed elk loin steaks instead of ground beef. Too bad the computer people are still holding my laptop hostage or it would have been all over the blog…

I did 4 miles of 1/2 mile intervals with 1/4 mile recoveries last night. Felt so good. Almost time to start tapering for the relay, though… I’m getting so pumped!!

OMG YUM! I love halibut I just got some from Costco this week! I made a deeeelish dish last night of Grilled asparagus, fennel, brown rice penne pasta with dijon mustard dressing! I love dijon and the combo with fennel was amazing. Awesome run btw, I am trying to up my milage but am definitely no where near your distances! I hope to do 10miles this weekend for my long run!
