Shrimp and Scallops over Quinoa

I seriously love quinoa! I bought a big bag of it in the bulk bins at Whole Foods a few weeks ago and I have been making it a lot. It is so versatile and I use it as a substitution for anything I would use rice/pasta/ect…

Two nights ago, I wanted to make a seafood pasta dish, but I decided to use quinoa since I was too lazy to make fresh pasta (I very rarely used dried anymore; it kind of sucks). I didn’t follow a recipe at all and I just kind of threw it together.

Ingredients

  • Fast tomato sauce (or any pasta sauce)
  • Shrimp
  • Scallops
  • Olive oil
  • Salt/pepper
  • Spinach
  • Parmesan cheese
  • Cooked quinoa (Make sure you rinse it)

Preparation

  1. I started by sautéing some shrimp and scallops (seasoned with salt and pepper) in some olive oil in skillet. Once they were almost cooked through, I added some fast tomato sauce (you can use any pasta sauce) and let it heat through.
  2. Add spinach and stir until wilted.
  3. Serve over cooked quinoa and top with parmesan cheese.

I’m also a fan of quinoa…I was actually just looking at a blog featuring quinoa sweet potato salad! I also love seafood, so this recipe sounds amazing!
