Maple Walnut Cake

I made this on Christmas Eve and I am finally getting around to posting it. We had a pecan pie already, so I decided to make a dessert/breakfast coffee cake for the family. After browsing one of my favorite recipe sites, I stumbled upon this one. Luckily, the only things that we had to buy were safflower oil and applesauce, so it was a pretty easy recipe to make.

I am seriously a sucker for maple syrup, so I knew I had to make this. I LOVE maple syrup; maybe that is why I am addicted to pancakes ;)

Maple Walnut Cake

Serves 12

Though it’s equally delicious on its own, try topping squares of this spiced cake with dollops of applesauce or almond butter. As a breakfast cake, it’s great served alongside scrambled eggs or tofu with bacon or tempeh sausage.

Ingredients

  • 2 cups whole wheat pastry flour
  • 1 1/2 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup maple syrup
  • 1/4 cup safflower oil
  • 2 large eggs
  • 1 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts

Method

  1. Preheat oven to 350°F. Lightly oil a 9-inch square cake pan.
  2. In a medium bowl, combine flour, cinnamon, baking soda and salt. Set aside. In a large bowl, whisk together syrup and oil. Whisk in eggs until combined. Whisk in applesauce and vanilla then add reserved flour mixture and whisk, beating well for 3 minutes. Stir in walnuts.
  3. Spoon batter into prepared pan. Bake until a toothpick inserted in the center comes out clean, about 35 minutes. Set aide to let cake cool in pan, then cut into squares and serve.

Haha we demolished about half of this thing before I could get a picture ;)

It was just as delicious as it sounds. It was moist, light, and had a nice maple flavor that went perfect with the walnuts. It is one of the better recipes I have ever made!

sounds like a winning recipe. i like the incorporation of applesauce. i think adding almond butter on top sounds like a delish idea.

wow! that sounds great! “safflower” oil?? i wonder if any oil would work. canola? anyway i am def making this for my fam. they will love it.

i feel like i haven’t “talked” to you in forever! i need to catch up!!!!! now i’m off to read about your tempo :)

this looks amazing! and i am loving all the ingredients in it too…haha, i love when food is so good, i don’t care about getting a good shot. enjoying it is always the #1 priority :)
