Honey Whole Wheat Pancakes

I know I always talk about pancakes on the blog, but I just realized that I have never posted my “go to” recipe. I seriously eat pancakes three to four times a week. They are the perfect food with so many variations. You can add nuts, fruit, peanut butter, granola, ect…

Pancakes

Ingredients

  • 1 1/4 cups whole-wheat flour
  • 1/4 cup wheat germ
  • 2 tablespoons honey
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon coarse salt
  • 1 1/2 cups non dairy milk (I like coconut milk or hemp milk)
  • 1/4 cup coconut oil
  • 2 large eggs, lightly beaten

Directions

  1. Whisk together flour, wheat germ, sugar, baking powder, baking soda, and salt in a bowl. Whisk in milk, oil, and eggs. Let stand 10 minutes (if batter thickens, stir in 1 tablespoon water).
  2. Coat a nonstick skillet with cooking spray, and heat over medium heat. Spoon in 1/4 cup of batter for each pancake. Cook until bubbles appear. Flip, and cook until golden brown, about 2 minutes.

Some of my favorite combinations…

  • Blueberry (duh!)
  • Blueberry granola
  • Banana pecan
  • Banana and peanut butter
  • Chocolate chip
  • Strawberry almond
  • Apple cinnamon
  • Pumpkin (stir 1/2-1 cup pumpkin into batter)

umm, those pancakes look amazing! i love pancakes, too, but my fave kind = probably pumpkin. :-)

Oh my God! How have I not had pancakes in forever?! You have changed all that. Can’t wait to make these. How many do the recipe make?? And I’m lovin’ the blueberry/banana combo …drizzle (a.k.a drown) in maple syrup and I’m there!! Do you typically have pancakes for breakfast or any time of day??
