It was chilly last night and I was in the mood for something to warm me up. What is better than some homemade chili? NOTHING! Except pancakes… Haha. I also needed to use up some sweet potatoes because I have a million of them . They were on sale over the weekend for $.59 a pound so I loaded up!
This meal took me FOREVER but it was totally worth it. I have leftovers too!
Black Bean Chili (Original recipe is linked)
Ingredients
- 1 tablespoon vegetable oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 pound ground turkey
- 3 (15 ounce) cans black beans, undrained
- 1 (28 oz) can crushed tomatoes
- 1 1/2 tablespoons chili powder
- 1 tablespoon dried oregano
- 1 tablespoon dried basil leaves
- 1 tablespoon red wine vinegar
- 1 tablespoon cumin
- Dash of red pepper flakes
- Shredded cheese
Directions
- Heat the oil in a large heavy pot over medium heat; cook onion and garlic until onions are translucent. Add turkey and cook, stirring, until meat is brown. Stir in beans, tomatoes, chili powder, oregano, basil, cumin, and vinegar. Reduce heat to low, cover and simmer 60 minutes or more, until flavors are well blended. Stir in red pepper flakes. Salt and pepper to taste.
- I followed the recipe to a T except I followed the other reviewers suggestions by using a 28 oz can of tomatoes, adding cumin, red pepper flakes, and shredded cheese at the end.
Sweet Potato Biscuits (Original recipe is linked)
Ingredients
- 1 1/4 cups all-purpose flour
- 2 heaping tablespoons brown sugar
- 4 teaspoons baking powder
- 1/2 teaspoon salt
- 3/4 cup mashed cooked sweet potatoes
- 1/4 cup (1/2 stick) softened butter (Smart balance)
- 2 to 4 tablespoons milk (I used vanilla soymilk)
- 1 teaspoon of cinnamon
Directions
- Preheat the oven to 450 degrees F.
- Sift together flour, sugar, cinnamon, baking powder and salt. In a separate, large bowl, mix the sweet potatoes and butter. Add the flour mixture to the potato mixture and mix to make a soft dough. Then add milk a tablespoon at a time to mixture and continue to cut in. Turn the dough out onto a floured board and toss lightly until the outside of the dough looks smooth. Roll the dough out to 1/2-inch thick and cut with a biscuit cutter. Place the biscuits on a greased pan and coat tops with melted butter. Bake for about 15 minutes. (Watch your oven: If the biscuits are browning too fast, lower the temperature.)
My chili came out perfect; all over the flavors were spot on. The biscuits tasted great, but they didn’t really rise too much. I’m not sure if that was my fault or if the recipe is like that. I also had a hard time shaping them like “biscuits” because the dough was kind of sticky. That was probably my fault for adding the sweet potatoes when they were hot! I was hungry and there was no way I was waiting for them to cool, especially when I could smell that chili!
It was an awesome meal!

My biscuits never look very pretty either but whatever, as long as they taste good, I don’t really care!

i’m super excited for you to run again!!!! what is the date of the race/???? i kind of wonder how soon i could run another marathon… like i’m all “trained” right? and now i want to train BETTER. i want to lose some poundage, get lean and mean, and run some 20-22+ milers so i become more and more used to the distance. i want to run a 3:30!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!
okay. i’ve vented. i love coming to your blog b/c it gets me fired up to run far:) i think at my status quo i am a middle distance runner, but hey, no need to accept status quo!
You read my mind! I was just thinking today I should attempt to make a chili…you know I’ve never had it before (not that I remember ?)…you are ambitious! Hope it satisfied your tummy and hope your still taking it easy on the legs as you need (or WANT to!!)

Looks delish! That’s weird how the bisuits didn’t rise that much. You had 4 tsp. of baking powder in em! Sometimes cream of tarter helps. It’s worked for me in the past with regular whole wheat biscuits.
I made this and added sweet potato chunks right INTO the chili! It was so yummy…especially with corn chips and yogurt drenched on top. Thanks for the inspiration
