Baked Shrimp with Feta Cheese

I am a recipe machine lately!

I had a major pasta craving last night and I had a bunch of fresh shrimp that I bought on sale. I stumbled upon this recipe and it seemed easy, delicious, and I had all the ingredients.

I mostly followed the recipe, but I made a few adjustments.

Baked Shrimp with Feta Cheese

Ingredients

  • 1  teaspoon  olive oil
  • 3/4  teaspoon  dried oregano
  • 1/2  teaspoon  salt
  • 1/4  teaspoon  crushed red pepper
  • 1  pound  medium shrimp, peeled and deveined
  • 3  garlic cloves, minced
  • Cooking spray
  • 1/2  cup  dry white wine
  • 3  cups  diced plum tomato (about 3/4 pound) (I used canned tomatoes)
  • 3/4  cup  (3 ounces) finely crumbled feta cheese
  • 4  cups  hot cooked linguine (I used whole wheat penne)
  • 1/4  cup  minced fresh parsley

Preparation

  1. Preheat oven to 350°.
  2. Heat oil in a large nonstick skillet over medium-high heat. Add the oregano and the next 4 ingredients (oregano through garlic); sauté for 3 minutes. Spoon the shrimp mixture into an 11 x 7-inch baking dish coated with cooking spray.
  3. Add wine to skillet; cook over low heat until reduced to 1/4 cup (about 3 minutes). Stir in tomato, and pour over the shrimp mixture. Sprinkle with cheese, and bake at 350° for 10 minutes. Serve mixture over pasta, and sprinkle with parsley.

I followed the recipe exactly except for using canned tomatoes instead of fresh, adding spinach to the skillet, and I used whole wheat penne instead of linguine. I also baked the mixture over the pasta to make it more of a baked ziti type dish. It was excellent.

Yummmm – I have shrimp and now I know what to do with it! I love anything with sauce, pasta, cheese and veggies…so this should work wonders :) . Great job on the running RockStar – your doing better than me. My calves and hips are sore as hell. I just biked a short bit at the gym and went for a short walk – lame but I don’t have it in me (i don’t think)…time to bust out a foam roller!

This looks pretty tasty, though I’m generally afraid to make anything with seafood since I’m stuck in the middle of the country, far away from anything resembling an ocean. Maybe when I go back to VA…
