Fast Tomato Sauce

I was in the mood for an Italian meal a few nights ago, So I pulled out my newest cookbook, How to Cook Everything (inspired by Jess). This cookbook is awesome. I love his philosophy on food and cooking. He is a runner too!

I want to eventually make everything in the essential recipes section (maybe I will beat Jess… Depends who eats more!), so I started out with the Fast Tomato Sauce, but added a few variations.

I couldn’t find the recipe online so I am not quite sure I can post it. Can anyone tell me the rules on this copyright stuff? Wow that just took the whole fun out of my post. It is really simple though. I am sure you can figure it out on your own very easily.

For the sauce you will need

  • Salt
  • Extra Virgin Olive Oil
  • Chopped Onion
  • Canned Tomatoes
  • Freshly Ground Black Pepper
  • Parmesan Cheese (For Garnish)
  • Chopped Parsley or Basil (For Garnish)
  1. Sauté onion in the oil on medium high heat until the onion is soft, about two to three minutes. Stir in the tomatoes, salt, and pepper.
  2. Cook until the tomatoes break down and the mixtures thickens, about 10 to 15 minutes. Season to taste.
  3. Cover, cool, and place in the refrigerator until ready to use. Freeze for longer periods. I actually made a double batch and put some in the freezer.

I used this sauce for my dinner. I heated the sauce in a sauce pan and added some whole wheat penne, steamed broccoli, zucchini, squash, and spinach. I finished it off with some parmesan cheese. For some protein, I grilled up a chicken breast and topped it with an Italian five cheese blend.

Wow that looks great! Wasn’t the author of that cookbook featured in the the October issue of runner’s world?

I swear by How to Cook Everything by Mark Bittman! It’s the only cookbook that I’ll reference over and over again! Mmm…

Awesome! Glad you’ve bought the book and can’t wait to see what you choose to make. I haven’t made the tomato sauce yet and it looks good!
